"Hello, Cabernet Sauvignon lovers, rise: this is for you! Vibrant aromas of blackcurrants, cassis, and roasted bell peppers are complemented by notes of graphite, cedar, and licorice from the barrel aging. Lovely tension and vivacity on the palate with crunchy blackcurrant fruit, black pepper, cigar box, and sandalwood flavors. The Year
The winter of 2021 took a dry start, which was very helpful with pruning. Snow arrived by the end of March with a significant cooldown, followed by a dry April. All spring turned out to be cold, resulting in an annoyingly slow-growing period that lasted long. We faced the summer with roughly two weeks of delay. Lots of rain helped to bloom and ripen, keeping us busy with constant green work. Extreme hot June, July, August, and even early September temperatures helped to keep the fruit healthy throughout the summer, also creating dangerously high-concentrated berries. We had to pay extra attention to the rose grapes` harvest time to avoid overripening and preserve freshness. This year was all about discipline, a challenging vintage with great results.
The Vineyards
Blend of three estate-grown vineyards: Ördögárok, Kopár, and Konkoly. The backbone of this wine is given by the Cabernet Sauvignon grown in Ördögárok vineyard. Its name (Devil’s Ditch) is given by its shape: a V-shaped vineyard where the warm air gets trapped, creating an especially warm microclimate that suits perfectly the late-ripening Cabernet Sauvignon. Kopár is the most famous vineyard of the region. With a due south exposure and a southern location, it is believed that it is the warmest vineyard of Hungary, creating wines that are rich and concentrated. Konkoly is located behind the hill where the Kopár vineyard is (Sárszomlyó hill). Since it is protected by the hill, it never suffers from excess heat. On the contrary, the forest of the northern side of the Sárszomlyó hill offers cooling breezes to the vineyard. These three iconic -and very different- locations combined create the flagship wine of the Sauska winery: Cuvée 7 Villány.
